Last Weekend

Here are some pics and some video from our drive up to the mountains last weekend - it sure was beautiful up there... I can't wait to go camping. The video below is on the 79 driving towards Lake Cuyamaca...some of the video gets a bit out of focus... sorry about that, I think it was due to the glare on the windsheild. The music we are listening to is a great Hawaiian Artist, IZ Kamakawiwo'ole. We discovered him on our honeymoon...Love him! Click on his name for another sample of his sound...
Click the play button and Enjoy the ride!

Here are some pics of the lake...

We were happy to see there was a ton of water in it, should make for some good fishing... maybe we should bring our poles when we go back.

Sorry for my lack of posts... it has been a very busy week!

Pics on the way!

Memorial Day Plans

Memorial day weekend is coming up and we have made plans to go camping at Mt. Laguna! :)
We usually tent camp it up there that weekend every year.... But being that I am pregnant and don't really feeling like running to the bushes 6 times in the dark in the night my dear sweet hubby got us a rig again :)
I can't wait! We drove up there to check out some sites over the weekend... I took some pretty pics - I will upload them tomorrow. The spring flowers are just beginning to bloom so we should be in for a truely beautiful show once we get up there in late May.

Crab Salad

Happy Friday!

Here is a delish and easy recipe for you to try over the weekend or some time this season or next - my family loves it and I always get lots of requests for it when they want me to bring something.

JO’s Imitation Crab Salad

1 Pkg Imitation Crab
¾ pkg of small pasta shells (cooked, drained and cooled)
12-15 baby carrots chopped
2 stalks celery chopped
3 green onions chopped
3 Tbl Hidden Valley Ranch Dressing
1/3 cup Mayo (more or less as desired)
Morton’s Nature Seasoning (look for the blue cap)

Mix wet ingredients with veggies and about ¼ tsp seasoning. Then mix with pasta. Chop your Crab up in chucks – not too small then mix in to pasta mix. Sprinkle more seasoning on top and then chill for at least 4 hours. Enjoy! YUMMY!
Have a great day!

The Flower Fields!

Every year we try to make it up every spring to Carlsbad to see the flowers! The display only last a couple months.... and it is so worth the wait. A day of flowers, sunshine, sea breezes, lemonade and strawberry shortcakes. Perfect!

Here are some pics of the Carlsbad Flower Fields.

What can be more beautiful than a day in a HUGE field of flowers!

Rununculus everywhere in every color! I love them!
More than 50 arces of wonderful color and radiant flowers.click on the photos above and enlarge to really get a good view!
Here are some of the other flowers in the walking gardens.... they are beautiful too!

It is such a relaxing day here... everyone is smiling and happy.... you can't help it when you are surrounded by such color. There are birds chirping and butterflies floating by.

Of course I had to buy a bunch of rununculus to bring home and enjoy. :)

Drea's Babies

Saturday April 5th, 2008.... the guys and the babies before we left...

Here are some cute pics of my friend Andrea and here babies.

Last weekend we all went to Seaport Village on Saturday night and had some fun!

Holly is a cutie, just 4 months old and already lots of fun.

Her big sister Angela is a riot and really makes us all laugh :)

Look at her smile! She hams it up for the camera.

RO bought Angela a Minnie Mouse balloon that was as big as her. She loved it and kept making it dance for us.

Check out the video...
